I was so excited to pick up my tomatillos this evening.  I don’t think I’ve ever actually cooked with them, but they have been on my bucket list for awhile.

I immediately jumped on the computer to find some recipes.

The first recipe I found was for this steak quesadilla with roasted tomatillo and apple salsa.  (Click here).  I’m not sure if I’ve mentioned before that I have a bit of an aversion to meats paired with fruit, but after the apple, cabbage, and Italian sausage recipe I posted about and made last week, I’ve decided that I am going to have to give this a try.  It will have to wait until after the kids are in bed one day because it obviously involves dairy, but I think this will be worth the wait.  I love quesadillas!

Next I found this spicy cold tomatillo soup by Martha Stewart.  (Click here).  To be honest, I’m not 100% sure of what I think about this one.  I usually crave bold flavors, but this combination of tomatillos, chilis, and avocado has me questioning whether I am brave enough for this.  If anyone tries it, please let me know.

Finally, I found this tomatillos salsa recipe.  (Click here).  When I first saw the tomatillos, I was sure I was going to make salsa with them, but now that I saw the quesadilla, I’m not so certain.  Luckily the world is full of tomatillos, and I ultimately don’t have to choose!
