Summer Vegetable Side Dish

I’m a big fan of one dish meals.  You can probably tell by the recipes that I’ve been sharing.  With three little kids, I don’t have a lot of time to myself in the kitchen, so I like fast and easy.  And a fast clean up as well!

But sometimes variety is nice.

So tonight I have been thinking of making a traditional meat, potato, veggie meal.

While I would love to make twice baked potatoes, I just don’t think I’m going to have the time, so I think I will go with my favorite garlic mashed potatoes.  And I’ll let my husband pick out the meat when he goes to the store.

What I am most excited about, however, is this summer veggie recipe.  (Click here)  With eggplant, tomatoes, summer squash, and leaks, it contains quite a few of my favorite things.

And I’m going to make some extra of the veggies, so my daughter can have them in a sandwich for her first school lunch of the year tomorrow.  Where has the summer gone?!
