New Potatoes

New potatoes are extra tender and delicious so please don’t peel just gently wash and cook lightly.

New potatoes are dug early before maturity so they won’t keep as long as late season potatoes so eat them fresh within a week.  Potatoes should not be stored in the refrigerator, they should be stored in a cool, dark place like a paper bag.

    Thanks for the new potatoes, i usually wait until later in summer to dig my potatoes because i know that it helps them to keep longer, this year we planted extra potatoes and will be able to dig some early. i tried some of the taters from the garden here at the nursery and i LOVE them. the worst part of cooking potatoes is the skinning and the long boil time. mostly the skinning. but with new potatoes (those dug early) the skin has not yet toughened and is still very edible. so this time we just chopped them and roasted some with our turnips, which turned out great (a little olive oil, onion, salt and pepper) and then we also tried them mashed (skins on) and we boiled them for oh, about 8 minutes, if even, and they were delicious and the skins gave it a little different texture and i felt they were more flavorful with a finer texture. good stuff!
