First Pick Up

So we were so excited to go get our first pick up from the CSA yesterday.  As I mentioned in my previous post, we are new to this whole experience, so we weren’t really sure what to expect.  Everything went great though.

My four year old especially had fun picking which veggie bundles she wanted.

We have had a busy couple of days, so I’m hoping to get a chance this weekend to try some new recipes.

I spent some time yesterday searching for some new salad recipes.  My children sometimes balk at veggies, but if I put them in a salad, for some reason, they all go crazy and eat a whole slew.

Here are some of the best ones that I found that contained produce we all got yesterday from Spring Bluff.

Arugula Salad

This recipe from the Food Network is going to be one of the first ones I try.  With three little kids running around, I like simple, and with only five ingredients, this one tops that list.

Lemony Kale Salad

This salad contains, among other things, kale, swiss chard, and green onions.  There’s a lot of nutrition packed in here, and with three variations, there are different options depending on the taste buds you are accommodating.  We will have to head out and get some more green onions though because my husband gobbled those up within minutes of getting into the house.  He’s a big fan.

Broccoli Rabe, Ricotta, and Chickpea Salad

Unfortunately, I’m not sure if I will be able to try this recipe as my oldest daughter can’t eat dairy, but it looked so good, I thought I would pass it on to all of you in the hopes that someone out there can enjoy it.  If you do try it, let me know what you think.  I’ll live vicariously through you.

Well those are some of the best I have found out there.  I’ll be back in a couple of days with some updates on the recipes I try.  I’m most excited about finding a way to use some of the fresh oregano!  My youngest was a big fan of its scent.

Enjoy your weekend!
