Chicken Tomatillo Soup

So I’ve been wanting to figure out a way to introduce my girls to tomatillos, but they aren’t fans of salsa.  Lucky for me, I found this recipe for chicken tomatillo soup.  (Click here)

The recipe is a simple one not requiring much more than chicken, jalapeños, tomatillos, and onions.  The great thing about this is that you can make it spicy or somewhat mild.  I made mine mild for the girls, but if I were to make it myself, I would have gone much stronger.

I think I’ll make this again.  It’s a great way to include some of the spicier veggies without making the flavor overwhelming.

The finished soup is actually pureed into a broth, but I forgot to photograph that last step.
