Beet Lemonade

I am horrible at making summertime drinks.  It doesn’t matter if it’s tea, lemonade, or some combination of the two.  It always ends up either too bitter or too sweet.

And then I found this recipe for beet lemonade.

The beets round out the taste of the lemons, and even though I didn’t add enough water (my pitcher was too small) it was perfect.  All three of my girls will attest to that.

I don’t have a nice food processor, so I just added the beets to my chopper, and when they were nice and chopped up, I added them to the blender with the rest of the ingredients.  The recipe recommends draining the pulp from the beets.  I skipped that step — I had three little girls clamoring to get a taste, and they didn’t mind the pulp at all.

As always, I cringe a little at all of the sugar that needs to go into lemonade.  If you are adept at subsituting healthier sweeteners, that would make this a bit more healthy.  If you come up with a good substitute, let me know.  I would love to make it healthier next time.

Either way, it’s great with ice on a hot summer day.
